1 apple chopped
1 cups cooked quinoa
Chopped almonds (or walnuts)
Fresh parsley minced
Mixed salad greens, or simply only lettuce

Sauce: Apple Chutney
Combine a small grated apple, onion, fresh ginger, lemon/orange juice, vinegar, brown sugar, mustard seeds, pepper flakes and salt and in a large saucepan. Bring the mixture to a boil over medium-high heat, stirring occasionally. Set aside to cool, and refrigerate. Serve cold with the salad.
